It’s the first of May, and you know what that means up on Primrose Street? 

STEAK BINGO IS BACK!

If you haven’t heard of steak bingo, it’s a fun way to try new steak cuts, collect stamps, get discounts, and win delicious prizes and it runs from the first of May until Labour Day.

This year, we got a new square layout to mix up the strategies. We have added the option for a meat discount when you turn in your ballot, AND we’ve added a bonus line as an additional way for you to collect additional ballots.

This year, we are going CANADIAN MADE 🍁 and have a hand crafted portable BBQ from @black_earth_grills in Manitoba. Handcrafted by Canadians for Canadians with Canadian steel. 

We’ll post more about this handsome grand prize later, but shout out to Jeff from @timberandgas for hooking us up!

We’ve been married 4 years… she knew what she was getting. This is one of my favourite summer go-to’s. Brown food doesn’t get much better than this! Get the full smash tot taco salad recipe right here and follow for more gourmet vegan comfort food recipes!

INGREDIENTS:
2 cups frozen tater tots
2 tbsp neutral oil
4 tsp taco seasoning
1/2 cup frozen corn
1/3 cup vegan mayonnaise
1/2 cup chopped spinach
1/2 cup vegan ground beef crumble
2 tbsp tomato paste
2 tbsp water
1/4 cup sunflower seeds
3 sun dried tomatoes
2 tbsp chopped roasted red pepper
Pinch of salt
Squeeze of fresh lemon juice optional

INSTRUCTIONS:
1. Preheat the oven to 400 degrees F and add oil and tater tots to a large baking sheet. Cook for 7-10 minutes on one side. Remove from heat and smash with the bottom of a glass cup. Place back in the oven for another 8-12 minutes until brown and crispy.
2. Meanwhile in a small blender cup (we like the @vitamix ones), add sun dried tomatoes, roasted red pepper, sunflower seeds pinch of salt and a squeeze of lemon. Add water as needed to blend ingredients until mostly smooth. 
3. In a large bowl, add mayonnaise, vegan beef, spinach, corn, sun dried tomato mixture and tater tots. Stir gently until just combined and serve.
